Malden has welcomed a new ramen restaurant, Ebisuya Japanese Noodle House, to Summer Street. This restaurant is an offshoot of Ebisuya Japanese Market in Medford. The market gained popularity for selling cups of ramen, over the last few years. The owner wanted to expand his business so more people would get the chance to experience Ebisuya’s ramen. They began to serve dinner starting in late August.

Ebisuya makes sure to give their customers the ultimate dining experience. As soon as you walk in you are greeted enthusiastically by a team of energetic workers. Their ramen is fresh and handmade. Currently on their menu they have Shoyu Ramen (soy sauce based), and Miso Ramen; available in spicy or non spicy. The Miso ramen is very popular among customers given its ability to stimulate the consumer’s taste buds; it consists of miso sauce, Chashu pork, bean sprouts and scallion.

Jiamin You helps out as a cashier occasionally. She mentioned that Ebisuya is looking to expand their menu because it is “limited.” The restaurant is looking to add more Japanese traditional dishes. She also mentioned that customers have been requesting vegetarian options and they are considering adding “gluten free options for customers with allergies.”

The employees of Ebisuya have meetings every morning where each employee establishes their goals; at the end of the day, they meet once again to see if everyone completed their goals. Overall, everyone’s goal is to make sure each customer is happy and satisfied with their ramen.
